Yummy Snacks with the Healthiest Vegetables

Yummy snacks are a brilliant way to include healthy vegetables in your daily diet. We all know that vegetables are good for the health, but many of us simple avoid it for something spicier (at least I did it when I was younger!). Here I have a bagful of recipes for you that will really make you die for the vegetables which you so happily ignore. These dishes are very easy to prepare, so you must try them out.

Carrots and Raisins

I got this recipe from a friend who is simply fond of carrots. Besides the goodness of carrot, this recipe also brings in the sweetness of raisins, and is a wonderful delight for the palate. This is one of the healthiest recipes for the kids and the combination of sugar and sour cream can make them a few inches taller.


  • Raisins, ¼ cup
  • Large carrots, 2 in number
  • Sugar, 2 to 3 teaspoons, based on preference
  • Sour cream, 3 tablespoons

Take a small quantity of water in a bowl and place the raisins in it, till they become a little plump. With the help of the smallest area of the grater, grate the carrots.

Take the raisins out of the water and mix them with sour cream and grated carrots. Then add sugar according to your taste.

Vegetable Pancakes

This is perhaps a lot of health narrowed down to one snack! These are so yummy that I just cannot describe.


  • All-purpose flour, ½ cup
  • Baking powder, 1⁄2 teaspoon
  • Pepper, 1⁄4 teaspoon
  • Salt, 1⁄2 teaspoon
  • 1 egg
  • Carrot, grated, 1cup
  • Milk, 1⁄4 cup
  • Green onions, 2 in number, sliced
  • Zucchini, grated, 1cup
  • Oil, 2 tablespoons

Stir together pepper, salt, baking powder and flour in a mixing bowl.

Take the onions, egg, zucchini, carrots, milk and beat them together in another bowl. Add the mixture to the dry items and stir still they are properly blended

Take one tablespoon of oil and with the help of a large skillet, heat it over moderate heat.
Pour tablespoons of the batter into the pan, as you prepare a few pancakes in batches. Cook for a couple of minutes so that each pancake is golden brown on either side. As and when needed, keep adding the leftover oil to the pan.

Serve as soon as ready.

Oven Baked Vegetable Fries

Here you have sweet potatoes and turnip, a blend of which is sure to make a yummy treat. It is in fact a wonderful side dish and can give stiff competition to the French Fries.


  • Sweet potato, 1 large
  • Olive oil, 2 tablespoons
  • Turnip, 1 large
  • Chili powder, 1 teaspoon
  • Salt, 1⁄2 teaspoon

Peel turnip and sweet potato and cut them into ¼ inch strips. After putting them in a bowl, sprinkle with a mixture of olive oil, chili powder and salt. Turn occasionally so that there is thorough coating.

Over a cookie sheet lined with foil, spread in a single layer.
Bake for around 13 to 15 minutes at 375 degrees. Turn the prepared item and then again bake it for another 15 minutes. To ensure that it is properly cooked, taste a little bit.

Baked Zucchini Sticks

Zucchini certainly scores high so far as health and taste are concerned. Just prepare this baked dish, and I am sure that a single bite will make you fall in love!


  • Egg white, one
  • Italian cheese blend, 2 tablespoons
  • Seasoned bread crumbs, 1⁄3 cup
  • Garlic powder, 1⁄4 teaspoon
  • Zucchini, medium, three in number
  • Pepper, as per preference
  • Salt, as per preference

Slice the zucchini into about 3 to 4 inch long and ½ inch wide pieces.

Beat the egg white in a small bowl and use pepper and salt for seasoning it. Place cheese, garlic powder and breadcrumbs in a ziplock bag and shake properly. Use cooking spray for spraying the cookie sheet and then set the sheet aside.

First dip the zucchini sticks within the egg white mixture and then again dip them into cheese and bread crumb mixture. Make sure to dip only a few at a time. For coating the mixture shake well. Then in just one layer, keep the breaded zucchini. On the top, spray some more cooking spray. Bake for around 22 to 25 minutes at a temperature of around 425 degrees, till it assumes golden brown color.

Serve along which marinara sauce, which can be used as a dipping.
